  • 1/3 cup Dill Pickle Brine Adjust the amount to suit taste.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black Pepper Adjust to taste.

Method
 

Preparation Steps
  1. Dice the Colby Jack cheese into small cubes, mince the white onion finely, and chop the dill pickles into bite-sized pieces. Measure out the fresh dill.
  2. In a large pot, bring salted water to a rolling boil. Add rotini pasta and cook for about 7-8 minutes until al dente.
  3. Drain the pasta and rinse under cool water for about 30 seconds.
  4. Mix in 1/3 cup of dill pickle brine into the warm pasta.
  5. In a separate bowl, combine mayonnaise, sour cream, and the remaining dill pickle brine. Whisk until smooth.
  6. Fold in chopped dill pickles, diced cheese, and minced onion into the brined pasta. Pour the creamy dressing over and mix gently.
  7. Cover with plastic wrap and refrigerate for at least 1-2 hours.
