Preparation Steps
- Dice the Colby Jack cheese into small cubes, mince the white onion finely, and chop the dill pickles into bite-sized pieces. Measure out the fresh dill.
- In a large pot, bring salted water to a rolling boil. Add rotini pasta and cook for about 7-8 minutes until al dente.
- Drain the pasta and rinse under cool water for about 30 seconds.
- Mix in 1/3 cup of dill pickle brine into the warm pasta.
- In a separate bowl, combine mayonnaise, sour cream, and the remaining dill pickle brine. Whisk until smooth.
- Fold in chopped dill pickles, diced cheese, and minced onion into the brined pasta. Pour the creamy dressing over and mix gently.
- Cover with plastic wrap and refrigerate for at least 1-2 hours.
