  • 1 cup corn Use canned corn that is drained properly.

  • 1 finely minced jalapeño Remove seeds for less spice.
For the Dressing
  • ½ cup mayonnaise Use high-quality mayo for the best flavor.
  • ¼ cup sour cream Low-fat or dairy-free alternatives work well too.
  • 1 lime lime juice Freshly squeezed is best.
  • 1 tablespoon taco seasoning Can be replaced with a homemade spice blend.

Method
 

Instructions
  1. In a medium bowl, whisk together mayonnaise, sour cream, lime juice, and taco seasoning until smooth. Chill for 10 minutes.
  2. In a large bowl, combine coleslaw mix, red bell pepper, orange bell pepper, black beans, corn, cilantro, and jalapeño. Mix well.
  3. Pour the dressing over the vegetable mixture and fold gently until well coated.
  4. Garnish with extra cilantro if desired and serve immediately or refrigerate for up to an hour.
