Method
 

Combining and Dressing
  1. In a large mixing bowl, layer 2 cups of sliced English cucumbers, 1.5 cups of halved cherry tomatoes, and 1 small thinly sliced red onion. Gently mix using a spatula.
  2. In a small bowl, whisk together 1/4 cup of apple cider vinegar, 2 tablespoons of olive oil, 1 tablespoon of sugar, 1 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of dried oregano.
  3. Pour the dressing over the vegetable mixture and toss gently with tongs.
  4. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes, or up to 2 hours.
  5. Before serving, sprinkle with 2 tablespoons of chopped parsley or dill and give a final toss.
