Combining and Dressing
- In a large mixing bowl, layer 2 cups of sliced English cucumbers, 1.5 cups of halved cherry tomatoes, and 1 small thinly sliced red onion. Gently mix using a spatula.
- In a small bowl, whisk together 1/4 cup of apple cider vinegar, 2 tablespoons of olive oil, 1 tablespoon of sugar, 1 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of dried oregano.
- Pour the dressing over the vegetable mixture and toss gently with tongs.
- Cover with plastic wrap and chill in the refrigerator for at least 30 minutes, or up to 2 hours.
- Before serving, sprinkle with 2 tablespoons of chopped parsley or dill and give a final toss.
