  • 1 can Black Beans rinsed and drained
  • 1 cup Corn Kernels canned, frozen, or fresh

  • 1 medium Red Bell Pepper chopped; any color can be used
  • 3 stalks Green Onions sliced
  • 1/4 cup Cilantro chopped; parsley is an alternative
For the Dressing
  • 1/2 cup Sour Cream or Greek yogurt for a lighter option
  • 1/4 cup Mayonnaise or vegan mayo
  • 2 tablespoons Fresh Lime Juice fresh limes preferred
  • 1 tablespoon Chipotle Sauce adjust for spice level
For the Crunch
  • 3 cups Chili Cheese Fritos or any gluten-free corn chips
  • 1 tablespoon Taco Seasoning homemade or store-bought
  • 1 teaspoon Ground Cumin omit if unavailable

Preparation Steps
  1. In a large mixing bowl, add the coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, and cilantro. Sprinkle in the taco seasoning and ground cumin, then toss everything gently for about 1–2 minutes until combined.
  2. In a separate bowl, whisk together the sour cream, mayonnaise, lime juice, and chipotle sauce until smooth. This dressing will enhance the flavor of the salad.
  3. Pour the dressing over the salad mixture and gently fold them together, ensuring everything is well-coated. Add all but a handful of the Fritos and mix for added crunch.
  4. Sprinkle the reserved Fritos on top just before serving for a satisfying crunch.
