For the Chicken

  • 2 tablespoons olive oil for marinating
For the Tzatziki Sauce
  • 1 cup Greek yogurt full-fat recommended
  • 1/2 piece cucumber grated
  • 1 tablespoon fresh dill or dried dill
  • 1 clove garlic minced
  • 1 tablespoon lemon juice fresh preferred
For the Grain Base
  • 1 cup quinoa or couscous, can substitute with rice
  • 1 cup cauliflower rice low-carb alternative
For the Vegetables
  • 1 cup bell peppers chopped
  • 1 cup artichoke hearts canned or cooked

Equipment

  • Grill pan
  • mixing bowl
  • cutting board
  • Knife

Method

Step-by-Step Instructions
  1. Start by combining your chicken breasts with olive oil and preferred seasonings in a bowl. Ensure the chicken is well-coated, then cover and let it marinate in the refrigerator for at least 30 minutes, or ideally up to 4 hours.
  2. While the chicken marinates, prepare the tzatziki sauce. Grate half a cucumber and squeeze out excess moisture. In a mixing bowl, combine the drained cucumber with Greek yogurt, minced garlic, fresh or dried dill, lemon juice, and a pinch of salt. Stir until well combined and refrigerate.
  3. Once the chicken has marinated, heat a grill pan over medium-high heat. Add the marinated chicken breasts, cooking each side for about 5-7 minutes until they reach an internal temperature of 165°F.
  4. Begin layering your Chicken Tzatziki Bowls by placing a generous serving of quinoa or couscous at the base. Add the sliced, cooked chicken on top, followed by a dollop of tzatziki sauce and a colorful assortment of fresh vegetables.
