Step-by-Step Instructions
  1. Begin by thinly slicing the red onions into rings or half-moons, aiming for a thickness of about 1/8 inch.
  2. Combine rice vinegar, water, granulated sugar, and salt in a medium saucepan and heat until dissolved.
  3. Stir in soy sauce, sesame oil, ginger, and minced garlic into the warm brine.
  4. Transfer sliced onions to a heatproof jar and pour warm brine over them.
  5. Let the jar cool to room temperature for about 20-30 minutes, then seal and refrigerate.
  6. Before serving, sprinkle with toasted sesame seeds and chopped fresh cilantro.
