Preparation Steps
- Gather all your ingredients for the Spicy Asian Cucumber Salad including cucumbers, green onion, garlic, soy sauce, rice vinegar, granulated sugar, sesame oil, Chinese chili oil, sesame seeds, and salt.
- In a medium mixing bowl, combine 2 tablespoons of granulated sugar, 1 tablespoon of sesame seeds, 1 crushed garlic clove, and 2 tablespoons of chopped green onion. Stir in 3 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of Chinese chili oil, and 1 tablespoon of sesame oil. Mix thoroughly until the sugar dissolves.
- Trim off the ends of the cucumbers and spiralize them using chopsticks for guidance. Slice diagonally down the length of each cucumber to create long, thin spirals.
- Place spiralized cucumbers into a large mixing bowl, generously sprinkle with salt, and gently massage to draw out moisture. Let sit for 8-10 minutes then rinse and pat dry.
- Pour the prepared dressing over the dried cucumber spirals and toss gently. Cover and chill in the refrigerator for at least 10 minutes.
- After chilling, give it a final toss and serve in a large bowl or platter, garnished with additional sesame seeds or green onion if desired.
