  1. Gather all your ingredients for the Spicy Asian Cucumber Salad including cucumbers, green onion, garlic, soy sauce, rice vinegar, granulated sugar, sesame oil, Chinese chili oil, sesame seeds, and salt.
  2. In a medium mixing bowl, combine 2 tablespoons of granulated sugar, 1 tablespoon of sesame seeds, 1 crushed garlic clove, and 2 tablespoons of chopped green onion. Stir in 3 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of Chinese chili oil, and 1 tablespoon of sesame oil. Mix thoroughly until the sugar dissolves.
  3. Trim off the ends of the cucumbers and spiralize them using chopsticks for guidance. Slice diagonally down the length of each cucumber to create long, thin spirals.
  4. Place spiralized cucumbers into a large mixing bowl, generously sprinkle with salt, and gently massage to draw out moisture. Let sit for 8-10 minutes then rinse and pat dry.
