Ingredients
  

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/4 cup chopped nuts optional

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper for easy removal.
  2. In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, salt, baking powder, and cinnamon. Mix well.
  3. In a separate bowl, whisk together the melted butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries and nuts if using.
  5. Spread the mixture evenly into the prepared baking pan, pressing it down firmly.
  6. Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares.
