Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Remove the leaves from the cauliflower and trim the stem, ensuring the head remains whole.
In a small bowl, whisk together the olive oil, honey, sriracha sauce, garlic powder, smoked paprika, salt, black pepper, and lime juice until well combined.
Place the cauliflower head upside down on the prepared baking sheet. Brush the glaze generously all over the cauliflower, making sure to coat it evenly.
Roast in the preheated oven for 30-35 minutes, or until the cauliflower is tender and golden brown. Halfway through, brush with any remaining glaze.
Once done, remove from the oven and let it cool for a few minutes. Slice into wedges and garnish with chopped cilantro if desired.
