In a bowl, combine the chopped dates and boiling water. Let it sit for about 10 minutes until the dates soften. Stir in the baking soda and set aside.
In a large mixing bowl, combine the walnuts, vanilla extract, cinnamon, and salt.
In another bowl, whisk together the flour and melted coconut oil until well combined.
Add the date mixture to the flour mixture, followed by the eggs. Mix until just combined, being careful not to overmix.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
