  • 1 cup Feta cheese, crumbled can substitute with goat cheese for different flavor
  • 1/4 cup Fresh mint, chopped optional, can replace with basil
For the Dressing
  • 1 unit Lemon juice freshly squeezed is ideal
  • 2 tablespoons Olive oil use high-quality extra-virgin olive oil for best results

Step-by-Step Instructions
  1. Start by cubing about 4 cups of ripe, seedless watermelon into bite-sized pieces and set aside in a large mixing bowl.
  2. Slice one English cucumber in half lengthwise, scoop out any seeds, and chop it into half-moon shapes.
  3. Crumble approximately 1 cup of feta cheese and, if desired, finely chop a handful of fresh mint leaves.
  4. In the bowl with the watermelon, gently add the cucumber, feta, and mint, and combine carefully.
  5. Drizzle the salad with the juice of one freshly squeezed lemon and 2 tablespoons of olive oil.
  6. Gently mix everything together to ensure the watermelon remains intact and the feta is evenly distributed.
  7. Chill the salad in the refrigerator for about 10–15 minutes before serving for a refreshing experience.
