Ingredients

For the Dip
  • 2 cans drained corn kernels or frozen corn
  • 1 can black beans drained and rinsed
  • 1 cup mayonnaise
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 large jalapeno pepper finely diced
  • 8 slices thick-cut bacon cooked and crumbled
  • 1 medium red onion finely diced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 bunch green onion chopped for garnish

Equipment

  • mixing bowl
  • Oven-safe dish
  • spoon

Method

Step-by-Step Instructions
  1. In a large mixing bowl, add the drained corn, black beans, mayonnaise, softened cream cheese, cheddar cheese, mozzarella cheese, grated parmesan, diced jalapenos, crumbled bacon, and finely diced red onion. Sprinkle in the kosher salt and black pepper, then use a sturdy spoon to mix everything together until well combined.
  2. Once all ingredients are mixed, check the consistency of your Cowboy Corn Dip. If it feels too thick, you can fold in a tablespoon of milk or extra mayonnaise to achieve your desired creaminess.
  3. Carefully transfer the mixture into your chosen serving dish. Spread the dip evenly across the surface.
  4. If you prefer a warm Cowboy Corn Dip, preheat your oven to 350°F (175°C). Place your dish in the preheated oven and bake for about 20 minutes.
  5. Once baked or ready cold, remove it from the oven (if applicable) and let it cool slightly. Sprinkle chopped green onions over the top and serve with tortilla chips, crackers, or fresh cut vegetables.
