- In a small bowl, combine softened unsalted butter, minced garlic, and chopped fresh parsley. Mix thoroughly until smooth.
- Slice the Cuban bread in half lengthwise and brush the cut sides with the prepared garlic butter.
- Spread yellow mustard on one side of each sandwich. Layer smoked ham, salami or roasted pork, dill pickle slices, and mozzarella or Swiss cheese. Close the sandwiches with the buttered sides facing out.
- Preheat a cast iron skillet over medium heat for about 3-5 minutes.
- Place the sandwiches in the skillet, pressing down lightly. Grill for about 3-4 minutes until golden-brown on the bottom.
- Flip the sandwiches and grill the other side for another 3-4 minutes until cheese is melted and bread is golden.
- Remove the sandwiches from the skillet, let them rest for 1 minute, slice, and serve warm.
