- Preheat your oven to 400°F (204°C). Slice the sun-dried tomato focaccia in half horizontally, and place it on a baking sheet. Toast for 5-8 minutes until crispy and fragrant.
- In a small bowl, combine basil pesto with mayonnaise to prepare the creamy pesto mayo.
- Remove the toasted focaccia from the oven and let it cool. Slice it horizontally again if needed.
- Spread pesto mayo on the inside of the bottom half of the focaccia.
- Layer smoked turkey slices, fresh tomato slices, a handful of greens, and optional red onion over the pesto mayo.
- Place the top half of the focaccia onto the layered ingredients and gently press down.
- Slice the sandwich into wedges or halves and serve immediately.
