Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C). Slice the sun-dried tomato focaccia in half horizontally, and place it on a baking sheet. Toast for 5-8 minutes until crispy and fragrant.
  2. In a small bowl, combine basil pesto with mayonnaise to prepare the creamy pesto mayo.
  3. Remove the toasted focaccia from the oven and let it cool. Slice it horizontally again if needed.
  4. Spread pesto mayo on the inside of the bottom half of the focaccia.
  5. Layer smoked turkey slices, fresh tomato slices, a handful of greens, and optional red onion over the pesto mayo.
  6. Place the top half of the focaccia onto the layered ingredients and gently press down.
  7. Slice the sandwich into wedges or halves and serve immediately.
