Preparation Steps
- Generously season the pork ribs with salt and pepper and arrange them in a single layer in the slow cooker.
- In a mixing bowl, combine sweet chili sauce, minced garlic, fresh lime juice, fish sauce (or soy sauce), and honey. Stir well, adjusting chili flakes as per your spice preference.
- Pour the sauce over the ribs in the slow cooker to ensure each piece is well-coated.
- Cover and cook on low for 6-8 hours until the ribs are tender.
- Preheat the broiler, transfer the ribs to a baking dish, and brush with extra sweet chili sauce. Broil for 3-5 minutes until caramelized.
- Serve with jasmine rice or quinoa and garnish with fresh herbs.
