Ingredients
  

  • 2 large boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cooked bacon bits optional
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 5 minutes on each side until they are golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced mushrooms, diced green bell pepper, and diced onion. Sauté for about 5-7 minutes until the vegetables are tender.
  5. Return the chicken to the skillet, placing it on top of the sautéed vegetables. Sprinkle the shredded Monterey Jack cheese evenly over the chicken. If using, add the cooked bacon bits on top of the cheese.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
