- Pat the beef brisket dry with paper towels, then season both sides with salt, pepper, and paprika.
- Optionally, sear the brisket in a skillet over medium-high heat for 2-3 minutes on each side.
- Place a layer of sliced onions and minced garlic at the bottom of the slow cooker.
- In a bowl, whisk together beef broth, tomato sauce, Worcestershire sauce, brown sugar, apple cider vinegar, and dried thyme.
- Place the brisket on top of the onions and pour the sauce mixture over it. Cook on LOW for 8-10 hours or HIGH for 4-5 hours.
- Let the brisket rest for 10-15 minutes after cooking before slicing or shredding.
