Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 jar 16 ounces salsa
  • 12 lasagna noodles
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro optional
  • 1/2 cup sliced black olives optional

Method
 

  1. Preheat the oven to 375°F.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and simmer for 5 minutes.
  4. In a 9x13 inch baking dish, spread a thin layer of the beef mixture on the bottom.
  5. Place 3 lasagna noodles over the mixture.
  6. Spread 1/3 of the remaining beef mixture over the noodles, followed by 1/2 cup of cheddar cheese, 1/2 cup of mozzarella cheese, and 1/3 cup of sour cream.
  7. Repeat this layering process two more times.
  8. Finish with a layer of noodles topped with the remaining beef mixture and cheeses.
  9. Cover the baking dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  11. Let the lasagna cool for 10 minutes before slicing. Garnish with cilantro and olives if desired.

Notes
