Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Dice fresh strawberries into small pieces and pat them dry.
  3. Beat together softened cream cheese and unsalted butter until smooth and creamy.
  4. Gradually add granulated sugar to the mixture and beat until light and fluffy.
  5. Add large egg, vanilla extract, and almond extract (if using) and mix until well combined.
  6. Whisk together flour, baking powder, salt, and graham cracker crumbs in a separate bowl.
  7. Gradually add the dry mixture to the wet mixture, stirring just until incorporated.
  8. Fold in the prepared strawberries and white chocolate chips, if using.
  9. Chill the dough in the refrigerator for about 30 minutes.
  10. Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between each.
  11. Bake for 12-14 minutes until the edges are set and slightly golden.
  12. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
