Step-by-Step Instructions
  1. Sear the chicken in a skillet over medium-high heat for about 3 minutes on each side until golden brown, then transfer to the slow cooker.
  2. Caramelize sliced onion and minced garlic in the same skillet for about 5 minutes until the onion turns translucent, then add apricot pieces and cook down for another 5 minutes.
  3. Combine sauce ingredients (sugar, chicken stock, paprika, black pepper, and Thai sweet chili sauce) in the skillet and adjust seasoning.
  4. Pour the sauce mixture over the chicken in the slow cooker, ensuring it's well coated. Cover and cook on high for about 2.5 hours.
  5. To thicken the sauce, mix corn starch with water for a slurry, add to the slow cooker, and cook on high for an additional 2 minutes.
  6. Serve the apricot chicken over rice or mashed potatoes.
