Ingredients
  

For the Base
  • 2 large Sweet Potatoes substitute with butternut squash for a different flavor
  • 1 cup Rice can replace with quinoa or cauliflower rice for a low-carb option
For the Meat
  • 1 lb Ground Beef substitute with ground turkey or lentils for healthier or vegetarian option
For the Seasoning
  • 2 tbsp Olive Oil can be replaced with avocado oil or omitted for a lower-fat option

  • 1 tsp Smoked Paprika use regular paprika for less smoke or cayenne for heat
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Chili Powder

  • 1 medium Avocado delicious when drizzled with lime juice
  • 1 cup Tomatoes can substitute with salsa for a kick!
  • 1 cup Cheese try feta for a Mediterranean twist
  • 1 cup Beans great for vegetarian options
  • 1/4 cup Cilantro optional but highly recommended!
  • 1 tbsp Lime Juice drizzle on top for an added zing!

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Gather your diced sweet potatoes for seasoning.
  2. Toss diced sweet potatoes with olive oil, salt, pepper, and smoked paprika. Roast in the oven for 25-30 minutes, flipping halfway through.
  3. In a saucepan, combine equal parts of rice and water (or broth) along with a pinch of salt. Bring to a boil, then reduce to low and simmer for 15-18 minutes.
  4. In a skillet, cook ground beef over medium heat until browned. Stir in garlic powder, onion powder, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes.
  5. Assemble the bowls starting with a scoop of rice, topped with roasted sweet potatoes and seasoned ground beef.
  6. Add fresh toppings of choice including avocado, tomatoes, cheese, beans, cilantro, and lime juice.
