- Preheat the oven to 400°F (200°C). Gather your diced sweet potatoes for seasoning.
- Toss diced sweet potatoes with olive oil, salt, pepper, and smoked paprika. Roast in the oven for 25-30 minutes, flipping halfway through.
- In a saucepan, combine equal parts of rice and water (or broth) along with a pinch of salt. Bring to a boil, then reduce to low and simmer for 15-18 minutes.
- In a skillet, cook ground beef over medium heat until browned. Stir in garlic powder, onion powder, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes.
- Assemble the bowls starting with a scoop of rice, topped with roasted sweet potatoes and seasoned ground beef.
- Add fresh toppings of choice including avocado, tomatoes, cheese, beans, cilantro, and lime juice.
