  • 1 cup shredded cheese cheddar or mozzarella

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch casserole dish with cooking spray or butter.
  3. In a Dutch oven, heat avocado oil over medium heat. Add chopped onion and green pepper with diced sweet potatoes, sautéing for 8-9 minutes.
  4. Pour the sautéed mixture evenly into the greased casserole dish.
  5. In the same skillet, add turkey sausage and cook over medium heat until browned, about 5-7 minutes.
  6. In a separate bowl, whisk together eggs, milk, fresh thyme, salt, and pepper, then stir in shredded cheese.
