- Spread a generous layer of sun-dried tomato pesto evenly on one side of each slice of bread, set aside.
- Layer slices of mozzarella cheese on top of the pesto on one slice, then place the second slice on top, pesto side facing down.
- Heat a skillet over medium heat and add butter, allowing it to melt until it bubbles.
- Place the sandwich in the skillet, press down gently, and grill for about 3-4 minutes until golden brown.
- Flip the sandwich gently and grill the other side for an additional 3-4 minutes until both sides are crisp and cheese is melted.
- Remove from skillet, let cool for 1 minute, then slice diagonally and serve hot.
