Step-by-Step Instructions
  1. Spread a generous layer of sun-dried tomato pesto evenly on one side of each slice of bread, set aside.
  2. Layer slices of mozzarella cheese on top of the pesto on one slice, then place the second slice on top, pesto side facing down.
  3. Heat a skillet over medium heat and add butter, allowing it to melt until it bubbles.
  4. Place the sandwich in the skillet, press down gently, and grill for about 3-4 minutes until golden brown.
  5. Flip the sandwich gently and grill the other side for an additional 3-4 minutes until both sides are crisp and cheese is melted.
  6. Remove from skillet, let cool for 1 minute, then slice diagonally and serve hot.
