Ingredients
  

  • 8 ounces rotini pasta
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro chopped (optional)
  • 1/4 cup crumbled cotija cheese or feta cheese

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, corn, cherry tomatoes, and red onion.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss until everything is well coated.
  5. Gently fold in the cilantro and cotija cheese, if using.
  6. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled or at room temperature, garnished with additional cilantro and cheese if desired.
