For the Dressing
  • 1 cup Greek Yogurt Swap for dairy-free yogurt for vegan version.
  • 1/4 cup Mayonnaise Use more Greek yogurt for lighter dressing.
  • 2 cloves Minced Garlic Garlic powder can substitute if desired.
  • 2 tablespoons Lime Juice Substitute with lemon juice if needed.
  • 1 teaspoon Chili Powder Paprika is a great alternative.

Method
 

Preparation Steps
  1. Preheat your grill to medium-high heat, around 400°F (200°C). Grill the corn for 10–12 minutes, turning occasionally.
  2. Once grilled, let the corn cool, then slice the kernels off the cob and transfer them to a bowl.
  3. Add diced cucumber, chopped red onion, and cilantro to the corn, then toss gently to combine.
  4. In a separate bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper until smooth.
  5. Pour the dressing over the salad mixture and gently toss to coat all ingredients.
  6. Cover and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
