Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries chopped
  • 8 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract for filling
  • Oil for frying
  • Powdered sugar for dusting

Method
 

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
  2. In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat oil in a deep fryer or large pot to 350°F.
  5. Using a spoon or a piping bag, drop spoonfuls of batter into the hot oil, frying a few donuts at a time until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
  6. In a separate bowl, mix the softened cream cheese, powdered sugar, lemon juice, and vanilla extract until smooth. Fold in the chopped strawberries.
  7. Once the donuts are cool enough to handle, use a piping bag to fill each donut with the strawberry cheesecake filling.
  8. Dust the filled donuts with powdered sugar before serving.
