  • 2 pounds Chicken Thighs Skin on, bone-in for best flavor.
For the Sauce
  • 1/2 cup Soy Sauce Low sodium recommended.
  • 1/4 cup Dijon Mustard
  • 1 cup Apricot Preserves Can substitute with peach or orange marmalade.
  • 1 tablespoon Dehydrated Onion Fresh onion can be used for more flavor.
  • 1 teaspoon Kosher Salt Adjust if using regular soy sauce.
  • 1 teaspoon Granulated Garlic Fresh garlic can be substituted.
  • 1 pinch Crushed Red Pepper Adjust based on heat preference.

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C) and grease a 9x13 baking dish with oil.
  2. In a large mixing bowl, combine soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper. Stir until smooth.
  3. Coat the chicken thighs generously with the sauce and arrange them skin side down in the baking dish. Reserve any leftover sauce.
  4. Bake the chicken for 20 minutes in the preheated oven.
  5. Flip the chicken thighs so that skin side is up and spoon reserved sauce over each piece.
  6. Return to the oven and bake for an additional 25-30 minutes until glossy and caramelized.
