  • 12 ounces Rigatoni Pasta Penne or cavatappi also work well.
For the Meat
  • 1 pound Steak (sirloin or ribeye) Opt for well-marbled cuts for best flavor.
For the Sauce
  • 1 cup Heavy Cream Half-and-half or milk and Greek yogurt can be used.
  • 4 ounces Blue Cheese Choose quality cheese for best results.
  • 2 cloves Garlic Minced for best flavor.
  • 1 teaspoon Dried Oregano Fresh oregano may be substituted.
For the Vegetables
  • 1 medium Onion Finely diced.
  • 1 medium Bell Pepper Any color, diced.
For the Topping
  • 1 cup Mozzarella Cheese Gooey and melty topping.
  • 2 tablespoons Fresh Parsley Chopped for garnish.
For Cooking
  • 2 tablespoons Olive Oil Used for searing steak.
  • Salt To taste.
  • Black Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add rigatoni and cook for 10-12 minutes until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Sear steak for 3-4 minutes until browned, then set aside.
  3. In the same skillet, lower heat, add onions and bell pepper; sauté for 5 minutes until softened. Add garlic and cook for 1 minute.
  4. Pour heavy cream into the skillet, add blue cheese, oregano, salt, and pepper. Cook until the sauce thickens slightly, around 3-4 minutes.
  5. Return the rested steak to the skillet and add rigatoni. Stir gently until pasta is well-coated.
  6. Preheat oven to 375°F (190°C). Transfer mixture to a greased baking dish, top with mozzarella cheese. Bake for 15-20 minutes until cheese is melted and golden.
  7. Remove from oven, cool slightly, and garnish with parsley before serving.
