- Bring a large pot of salted water to a boil. Add rigatoni and cook for 10-12 minutes until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium-high heat. Sear steak for 3-4 minutes until browned, then set aside.
- In the same skillet, lower heat, add onions and bell pepper; sauté for 5 minutes until softened. Add garlic and cook for 1 minute.
- Pour heavy cream into the skillet, add blue cheese, oregano, salt, and pepper. Cook until the sauce thickens slightly, around 3-4 minutes.
- Return the rested steak to the skillet and add rigatoni. Stir gently until pasta is well-coated.
- Preheat oven to 375°F (190°C). Transfer mixture to a greased baking dish, top with mozzarella cheese. Bake for 15-20 minutes until cheese is melted and golden.
- Remove from oven, cool slightly, and garnish with parsley before serving.
