  • 1/4 cup Pure Maple Syrup
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Sriracha Sauce
  • 3 cloves Garlic (minced)
  • 1 teaspoon Chili Flakes
For the Coconut Rice
  • 1 can Coconut Milk
  • 1 cup Jasmine Rice
  • 1 cup Chicken Broth
  • to taste Salt and Pepper
For Garnishing
  • 1/4 cup Fresh Cilantro Chopped
  • 2 pieces Lime Wedges For serving

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Whisk together pure maple syrup, soy sauce, sriracha, minced garlic, and chili flakes to create a marinade.
  3. Season chicken breasts with salt and pepper, sear in olive oil for 2-3 minutes on each side until golden brown.
  4. Transfer seared chicken to a baking dish and pour the marinade over it.
  5. Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. In a saucepan, combine jasmine rice, coconut milk, chicken broth, and salt, bring to a gentle boil.
  7. Reduce heat, cover, and simmer rice for 18-20 minutes until fluffy.
  8. Let the chicken rest for a few minutes, then slice and drizzle with pan sauce.
  9. Fluff the coconut rice with a fork and serve alongside the chicken.
  10. Garnish with cilantro and lime wedges before serving.
