Method
 

Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C), for about 10-15 minutes.
  2. Husk the corn, rinse under cold water, pat dry, and brush each ear with olive oil. Season with salt and black pepper.
  3. Grill the corn on the grill grates for about 10-15 minutes, turning occasionally, until kernels are tender with grill marks.
  4. In a bowl, whisk together mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until smooth.
  5. Remove grilled corn from the grill and immediately slather each ear with the creamy Cajun sauce.
  6. Sprinkle with crumbled cheese, fresh cilantro, and drizzle lime juice. Optionally add chipotle or chili powder.
