Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering. This should take about 1–2 minutes.
  2. Add 1 pound of lean ground beef and 1 diced onion. Cook for approximately 5–7 minutes until the beef is browned and onions are translucent.
  3. Stir in 2 minced garlic cloves, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and a pinch of kosher salt and black pepper. Cook for an additional minute.
  4. Transfer the beef mixture to a plate and set aside. In the same skillet, add 2 diced sweet potatoes, 1 can of fire-roasted diced tomatoes, 1 can of diced green chiles, and ½ cup of water. Stir well and cover, simmer for about 20 minutes.
  5. Return the cooked beef mixture to the skillet and stir everything together. Sprinkle 1 cup of shredded cheddar cheese, then cover for about 1 minute until melted.
  6. Remove from heat and garnish with chopped cilantro or green onions. Serve warm.
