Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup ranch dressing
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Lime wedges for serving

Method
 

  1. In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, red onion, cheddar cheese, cilantro, ranch dressing, taco seasoning, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Lay out the flour tortillas on a clean surface.
  3. Divide the chicken mixture evenly among the tortillas, placing it in the center of each one.
  4. Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top to enclose the filling.
  5. If desired, grill the wraps on a skillet over medium heat for 2-3 minutes on each side until golden brown and heated through.
  6. Slice the wraps in half and serve with lime wedges on the side.
