Ingredients
  

For the Casserole
  • 4 cups shredded rotisserie chicken for quick prep
  • 8 ounces spaghetti opt for gluten-free pasta if needed
  • 1 medium onion diced
  • 1 medium red bell pepper diced
  • 2 cloves garlic minced
  • 1 can cream of chicken soup or swap with Greek yogurt and chicken broth
  • 1 can cream of mushroom soup can replace with more cream of chicken soup
  • 1 cup chicken broth low-sodium preferred
  • 2 cups cheddar cheese shredded, can swap with mozzarella or Monterey Jack
  • 1 cup sour cream can be replaced with Greek yogurt
  • 1 teaspoon paprika adjust according to preference
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste
  • 1 cup panko breadcrumbs for topping
Optional Vegetables
  • 2 cups spinach fresh or frozen
  • 1 cup mushrooms sauté before mixing in

Method
 

Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large skillet, melt butter over medium heat. Add onion and red bell pepper, cooking for about 5 minutes. Stir in garlic for an additional 30 seconds.
  3. Lower the heat, add cream of chicken and cream of mushroom soups along with chicken broth. Mix well until smooth. Stir in cheese, sour cream, paprika, black pepper, and salt.
  4. In a mixing bowl, combine cooked spaghetti and chicken. Pour in the creamy sauce and mix until everything is coated.
  5. Transfer the mixture to the prepared baking dish and spread evenly. Add remaining cheese on top.
  6. Mix panko breadcrumbs with melted butter and sprinkle on top of the casserole.
  7. Bake uncovered for 25–30 minutes, until golden brown and bubbling. Let cool slightly before serving.
