  • 4-5 pounds Beef Brisket trimmed
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder
  • 2 tablespoons Olive Oil for searing
For the Sauce
  • 1 Large Onion sliced
  • 3 cloves Garlic minced
  • 1 cup Beef Broth
  • 1/2 cup Balsamic Vinegar or Red Wine
  • 1/4 cup Brown Sugar optional; can substitute with maple syrup
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Worcestershire Sauce or tamari for gluten-free
  • 2 Bay Leaves
  • a handful Fresh Thyme Sprigs

Method
 

Step-by-Step Instructions
  1. Pat the brisket dry with paper towels. Mix kosher salt, black pepper, smoked paprika, onion powder, and garlic powder in a small bowl. Rub this mixture over the brisket.
  2. Heat olive oil in a skillet over medium-high heat. Sear the brisket for 3-4 minutes on each side until golden-brown.
  3. Sauté sliced onion and minced garlic in the same skillet for 2-3 minutes until fragrant. Add beef broth, balsamic vinegar or red wine, brown sugar, tomato paste, and Worcestershire sauce. Simmer for around 2 minutes.
  4. Transfer the seared brisket into your slow cooker. Pour the sauce evenly over the brisket, and add bay leaves and thyme sprigs. Cover and cook on low for 8-10 hours.
  5. Remove brisket from slow cooker and let it rest for 10 minutes. Slice against the grain and serve with sauce drizzled on top.
