- Pat the brisket dry with paper towels. Mix kosher salt, black pepper, smoked paprika, onion powder, and garlic powder in a small bowl. Rub this mixture over the brisket.
- Heat olive oil in a skillet over medium-high heat. Sear the brisket for 3-4 minutes on each side until golden-brown.
- Sauté sliced onion and minced garlic in the same skillet for 2-3 minutes until fragrant. Add beef broth, balsamic vinegar or red wine, brown sugar, tomato paste, and Worcestershire sauce. Simmer for around 2 minutes.
- Transfer the seared brisket into your slow cooker. Pour the sauce evenly over the brisket, and add bay leaves and thyme sprigs. Cover and cook on low for 8-10 hours.
- Remove brisket from slow cooker and let it rest for 10 minutes. Slice against the grain and serve with sauce drizzled on top.
