Step-by-Step Instructions for Southwest Ground Beef and Sweet Potato Skillet
- In a large skillet, warm 1 tablespoon of olive oil over medium-high heat until it shimmers, about 1-2 minutes.
- Add 1 pound of lean ground beef and 1 diced onion to the skillet. Cook until browned and almost cooked through, about 5-7 minutes. Stir in 1 tablespoon of chili powder, 1 teaspoon of ground cumin, salt, and pepper to taste.
- Add 2-3 cloves of grated garlic to the skillet. Sauté for an additional minute.
- Remove the beef mixture from the skillet and set aside on a plate. Wipe the skillet clean with a paper towel.
- Add 2 peeled and diced sweet potatoes, 1 can of fire-roasted diced tomatoes, 1 can of diced green chiles, and 1 cup of water to the skillet. Season and let simmer for about 20 minutes.
- Return the cooked beef mixture to the skillet and stir gently to combine. Heat through for about 3-5 minutes.
- Sprinkle shredded cheddar cheese over the skillet mixture. Cover and let cook for an additional 2-3 minutes.
- Remove from heat, garnish with fresh cilantro, and serve warm.

Notes
Ensure sweet potatoes are cut uniformly for even cooking. Make this dish in advance and freeze without cheese for easy meal prep.
