Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound smoked sausage sliced
  • 1 pound baby potatoes halved
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • ¼ cup chopped fresh parsley optional

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the halved baby potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.
  3. Add the diced onion and minced garlic to the skillet with the potatoes. Cook for another 5 minutes until the onion is translucent.
  4. Stir in the paprika, dried thyme, salt, and pepper. Return the sausage to the skillet and mix well.
  5. Cover the skillet and cook for an additional 10-15 minutes, or until the potatoes are tender.
  6. Stir in the fresh spinach and cook for 2-3 minutes until wilted.
  7. Garnish with chopped parsley if desired and serve hot.
