Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, powdered sugar, and granulated sugar until light and fluffy.
Add the vanilla extract and mix until combined.
Gradually add the all-purpose flour and salt, mixing until the dough comes together. Do not overmix.
Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
Roll out the chilled dough to about 1/4 inch thick. Cut into desired shapes using cookie cutters or a knife.
Place the cookies on the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
