  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, powdered sugar, and granulated sugar until light and fluffy.
  3. Add the vanilla extract and mix until combined.
  4. Gradually add the all-purpose flour and salt, mixing until the dough comes together. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  6. Roll out the chilled dough to about 1/4 inch thick. Cut into desired shapes using cookie cutters or a knife.
  7. Place the cookies on the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
