Preparation Steps
- Prepare the spice paste by pounding coriander roots, black peppercorns, and minced garlic into a fine paste for 3-5 minutes.
- Mix filling ingredients in a bowl: combine golden mountain sauce, white sugar, sesame oil, oyster sauce, ground pork, egg, and cornstarch. Blend until smooth for about 1-2 minutes.
- Transfer the blended filling mixture to a large bowl and fold in the spice paste, diced carrots, green onions, and rehydrated shiitake mushrooms for 2-3 minutes.
- Shape dumplings by placing a wrapper in your palm, scooping a tablespoon of filling, moistening the edges, folding and pinching to seal.
- Steam dumplings by lining a steamer with parchment paper, arranging dumplings without touching, covering, and steaming over medium heat for about 10 minutes.
