  • 50 grams Dried Shiitake Mushrooms Soaked before use
  • 2 tablespoons Golden Mountain Sauce Substitute with soy sauce if necessary
  • 1 teaspoon White Sugar Can use brown sugar
  • 2 tablespoons Oyster Sauce For vegetarians, use mushroom sauce
  • 1 tablespoon Cornstarch Can substitute with tapioca starch
Wrapping Ingredients
  • 20 pieces Dumpling Wrappers Wonton or gyoza wrappers
  • 1 tablespoon Sesame Oil Adds nutty richness
  • 1 tablespoon Garlic Oil For brushing

Method
 

Preparation Steps
  1. Prepare the spice paste by pounding coriander roots, black peppercorns, and minced garlic into a fine paste for 3-5 minutes.
  2. Mix filling ingredients in a bowl: combine golden mountain sauce, white sugar, sesame oil, oyster sauce, ground pork, egg, and cornstarch. Blend until smooth for about 1-2 minutes.
  3. Transfer the blended filling mixture to a large bowl and fold in the spice paste, diced carrots, green onions, and rehydrated shiitake mushrooms for 2-3 minutes.
  4. Shape dumplings by placing a wrapper in your palm, scooping a tablespoon of filling, moistening the edges, folding and pinching to seal.
  5. Steam dumplings by lining a steamer with parchment paper, arranging dumplings without touching, covering, and steaming over medium heat for about 10 minutes.
