Step-by-Step Instructions
  1. Place chicken breasts or thighs in a large crockpot. Add the sun-dried tomatoes, coconut milk or heavy cream, grated parmesan cheese, minced garlic, dried oregano, smoked paprika, crushed red pepper flakes, salt, and black pepper.
  2. Gently stir the ingredients until the chicken is well-coated in the creamy mixture. Cover the crockpot and set to cook on low for 6-7 hours or on high for 3-4 hours.
  3. Once cooking time is up, check that the chicken is tender enough to shred easily. Shred the chicken with two forks and return it to the sauce.
  4. Stir in the fresh lemon juice and olive oil. Fold in the chopped fresh basil.
  5. Serve the chicken and sauce over your choice of accompaniment, garnished with additional fresh basil.
