- Start by heating a large skillet over medium-high heat. Add a little oil and sear the chuck roast on all sides until nicely browned, about 4-5 minutes per side.
- While the beef cools slightly, wash and chop the Yukon Gold potatoes into bite-sized pieces and mince the garlic cloves.
- In your slow cooker, add the seared beef, chopped potatoes, and minced garlic. Pour in enough beef broth to cover the ingredients.
- Cover the slow cooker and set it to cook on low for 7-8 hours or high for 4-5 hours.
- About 30 minutes before serving, melt the butter in a small saucepan over low heat. Stir in additional minced garlic and allow it to simmer gently for 5 minutes.
- Once the cooking time is complete, stir in the melted garlic butter mixture into the beef and potatoes, and garnish with finely chopped parsley.
- Serve and enjoy generous portions, drizzling any extra garlic butter over the top.
