Step-by-Step Instructions
  1. Start by heating a large skillet over medium-high heat. Add a little oil and sear the chuck roast on all sides until nicely browned, about 4-5 minutes per side.
  2. While the beef cools slightly, wash and chop the Yukon Gold potatoes into bite-sized pieces and mince the garlic cloves.
  3. In your slow cooker, add the seared beef, chopped potatoes, and minced garlic. Pour in enough beef broth to cover the ingredients.
  4. Cover the slow cooker and set it to cook on low for 7-8 hours or high for 4-5 hours.
  5. About 30 minutes before serving, melt the butter in a small saucepan over low heat. Stir in additional minced garlic and allow it to simmer gently for 5 minutes.
  6. Once the cooking time is complete, stir in the melted garlic butter mixture into the beef and potatoes, and garnish with finely chopped parsley.
