  • 2 pounds Beef Stew Meat opt for chuck or round cuts
  • 1 cup Dried Lentils green or brown
  • 1 medium Onion chopped
  • 2 medium Carrots chopped
  • 2 stalks Celery chopped (optional)
  • 4 cloves Garlic minced
  • 1 can (14 oz) Diced Tomatoes
  • 4 cups Beef or Chicken Broth consider low-sodium
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Thyme
  • 1 leaf Bay Leaf remove before serving
  • to taste Salt adjust as needed
  • to taste Black Pepper adjust as needed
Optional Add-Ins
  • 1 cup Zucchini stir in during last hour
  • 1 cup Frozen Peas add in last 30 minutes

Method
 

Step-by-Step Instructions
  1. Chop the onion, carrots, celery, and garlic into bite-sized pieces. Optionally sear the beef stew meat in a skillet over medium-high heat for about 5 minutes.
  2. Place the prepared beef, lentils, chopped vegetables, and minced garlic into your slow cooker. Add the diced tomatoes and broth. Stir in the smoked paprika, ground cumin, dried thyme, and bay leaf.
  3. Cover and cook on low for 8-10 hours or high for 4-6 hours until beef is tender and lentils are soft.
  4. Remove the bay leaf, taste the stew, and adjust seasoning with salt and black pepper as needed.
  5. Serve hot, optionally with crusty bread or over rice.
