- In a large skillet over medium heat, add sliced smoked sausage and cook for about 5-7 minutes, stirring frequently until browned.
- Add diced bell peppers, onions, and celery to the skillet with the sausage. Cook for an additional 4-5 minutes until softened.
- Stir in long-grain white rice, allowing it to toast slightly in the mix for about 2 minutes.
- Pour in chicken broth, and sprinkle in minced garlic and Cajun seasoning. Bring to a boil, reduce heat to low, cover and simmer for 15-20 minutes.
- Once rice is cooked, gently fold in the peeled shrimp. Cover and cook for an additional 5-7 minutes until shrimp are pink.
- Remove from heat and fluff rice with a fork. Garnish with freshly chopped green onions and serve hot.
