Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Drizzle approximately 1 tablespoon of olive oil onto the lined baking sheet, followed by a swirl of balsamic glaze, a sprinkle of fresh thyme, and salt and pepper.
  3. Halve the shallots and arrange them cut-side down on the parchment, creating a decorative pattern.
  4. Cut a sheet of puff pastry into a rectangle large enough to cover the arranged shallots completely and lay it over them.
  5. Brush the puff pastry with an egg wash made from a beaten egg to create a golden finish.
  6. Place the baking sheet in the preheated oven and bake for 25-30 minutes until the pastry is golden brown.
  7. Remove the tarts from the oven and let them cool for about 5 minutes before flipping them onto a serving plate.
  8. Crumble feta cheese over the warm tarts just before serving.
