Preparation Steps
  1. In a large skillet, melt 3 tablespoons of butter over medium heat. Once melted, add finely chopped onion, minced garlic, diced celery, and bell pepper. Sauté these for about 5 minutes until they soften.
  2. Stir in 2 teaspoons of Cajun seasoning, 1 teaspoon paprika, a pinch of thyme, and freshly ground black pepper and salt to taste. Cook for an additional minute.
  3. Sprinkle ¼ cup of all-purpose flour over the mixture. Stir well to combine and cook for another minute.
  4. Gradually whisk in 1 cup of seafood stock and 1 cup of heavy cream. Cook on medium heat for about 3-5 minutes until it thickens.
  5. Remove from heat and fold in 1 cup of frozen peas, 1 cup of chopped shrimp, and 1 cup of crab meat. Add hot sauce if desired.
  6. Preheat your oven to 400°F (200°C).
  7. Pour the filling into a baking dish and cover with the rolled-out pastry. Cut slits for steam.
  8. Whisk together one egg and a splash of water for the egg wash. Brush the top crust.
  9. Bake for 25-30 minutes until the crust is golden brown and the filling is bubbling.
  10. Allow to cool for 10 minutes before serving.
