Ingredients
  

For the Roll-Ups
  • 12 sheets Lasagna noodles Cooked al dente.
  • 1 medium Butternut squash Peeled and cubed.
  • 4 cloves Garlic Roasted.
  • 2 tbsp Olive oil For roasting.
For the Cheese Filling
  • 15 oz Ricotta cheese
  • 8 oz Mozzarella cheese Shredded.
  • 1/2 cup Parmesan cheese Grated.
For Seasoning
  • 1 tsp Salt
  • 1/2 tsp Black pepper Adjust to taste.
  • 1 tsp Dried sage Can use thyme or rosemary.
For Assembly
  • 2 cups Marinara sauce Store-bought or homemade.
  • 1/4 cup Fresh parsley Chopped.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Peel and cube the butternut squash, toss with olive oil, salt, and pepper, and roast with garlic for 25-30 minutes.
  2. Cook lasagna noodles according to package instructions until al dente. Drain and rinse in cold water.
  3. Mash roasted squash and garlic with ricotta, mozzarella, Parmesan, salt, black pepper, and sage until creamy.
  4. Spread marinara sauce in a baking dish, fill noodles with the mixture, roll and place seam-side down.
  5. Top with remaining marinara and mozzarella, cover, then bake for 20 minutes. Broil for 2-3 minutes for a golden finish.
  6. Garnish with parsley before serving.
