Preparation
- Preheat your oven to 400°F (200°C). Peel and cube the butternut squash, toss with olive oil, salt, and pepper, and roast with garlic for 25-30 minutes.
- Cook lasagna noodles according to package instructions until al dente. Drain and rinse in cold water.
- Mash roasted squash and garlic with ricotta, mozzarella, Parmesan, salt, black pepper, and sage until creamy.
- Spread marinara sauce in a baking dish, fill noodles with the mixture, roll and place seam-side down.
- Top with remaining marinara and mozzarella, cover, then bake for 20 minutes. Broil for 2-3 minutes for a golden finish.
- Garnish with parsley before serving.
