- Begin by cutting the brie into 12 equal cubes, approximately 1½ inches in size. Gently pat each cube dry with a paper towel; set aside.
- On a lightly floured surface, roll out the puff pastry until it’s about 1/8 inch thick. Cut the pastry into 12 equal squares, approximately 3 inches in size.
- In a mixing bowl, combine the chopped, toasted pistachios, minced fresh thyme, and a sprinkle of sea salt. Mix well.
- Take one puff pastry square and place a brie cube in the center. Fold the corners over the cheese, pinching to seal. Brush with egg wash and roll in the pistachio mixture.
- Preheat your oven to 350°F (175°C) and place the prepared bites on a baking sheet. Bake for 15-18 minutes until golden brown.
- Remove from the oven and cool for about 3-4 minutes.
- Before serving, sprinkle with cracked black pepper and drizzle with honey-thyme glaze if desired. Serve immediately while warm.
