- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine roughly chopped pistachios, honey, rosemary, sea salt, and black pepper.
- Roll out chilled puff pastry to about 1/8 inch thick and cut into 3x3 inch squares.
- Place a piece of Brie in the center of each pastry square and top with the pistachio mixture.
- Fold corners of pastry over Brie and pinch seams to seal.
- Beat an egg and brush the top of each pastry packet with the egg wash.
- Arrange on a baking sheet and bake for 15 to 20 minutes, until golden brown.
- Once baked, garnish with cranberries or pomegranate seeds and serve warm.
