- Finely chop the parsley, garlic, and Fresno pepper. In a medium bowl, combine them with dried oregano, salt, and pepper.
- Drizzle olive oil and red wine vinegar into the herb mixture and stir thoroughly. Let the chimichurri stand for at least 1 hour.
- Marinate shrimp in a mixing bowl with olive oil, minced garlic, honey, smoked paprika, salt, and pepper for 20 minutes.
- Heat a non-stick skillet over high heat and cook the marinated shrimp in a single layer for 2-3 minutes per side.
- Transfer shrimp to a serving dish, spoon chimichurri sauce over the top, and serve with extra chimichurri on the side.
