  • 1 medium Yellow Onion Can swap with white onion
  • 1 medium Red Bell Pepper Green bell pepper can be used as a substitute
For Seasoning
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 can Diced Green Chiles Choose mild or hot
  • 2 teaspoons Chili Powder Can swap for taco seasoning
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika Feel free to use regular paprika
  • 0.5 cup Cilantro Omit if not a fan
For Topping
  • 1 cup Shredded Cheese Cheddar and Monterey Jack recommended

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of avocado oil over medium-high heat until it shimmers.
  2. Add diced Yukon gold potatoes to the skillet and sauté for approximately 6 minutes, stirring occasionally until they begin to soften.
  3. Push the sautéed potatoes to one side and add 1 pound of lean ground beef, 1 chopped yellow onion, and 1 chopped red bell pepper to the other side.
  4. Season with kosher salt and black pepper and cook for about 6-8 minutes, breaking the beef up as it cooks until browned.
  5. Stir in a can of diced green chiles, 2 teaspoons of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika to the meat mixture.
  6. Continue to cook for an additional 4-5 minutes, stirring frequently until the potatoes are tender and infused with spices.
  7. Sprinkle a cup of shredded cheese over the skillet, cover the pan and cook for 2-3 minutes until the cheese melts.
  8. Serve hot, garnished with fresh cilantro if desired.
