Step-by-Step Instructions
  1. Brown the chicken in a large skillet over medium-high heat for 5-6 minutes until fully browned.
  2. Drain excess fat, return skillet to medium heat, stir in taco seasoning and a splash of water, cook for another 2 minutes.
  3. Remove from heat and let the chicken rest for 5 minutes.
  4. Prepare the cauliflower rice by sautéing fresh in the skillet for 3-4 minutes, or microwave frozen for 4-5 minutes.
  5. Assemble bowls with romaine lettuce, cauliflower rice, seasoned chicken, avocado, tomatoes, red onion, cheese, and cilantro.
  6. Top with salsa, sour cream, minced jalapeño, and lime juice before serving.
